Closing the Harvesting Season

I've been getting a lot of people asking me when I'm finally going to finish the three part blog series on The Vaccination Controversy. After several years of repeating the same pattern, I finally have to admit to myself that from the middle of April until the end of November my intense travelling schedule and harvesting herbs take up so much time that it doesn't leave me a lot of opportunity for writing. I'm not complaining. I'm following my heart and my path and love my work and still able to spend a lot of time just being with the plants and Nature. It requires prioritizing and setting boundaries. Following our heart, allowing time to just be and the quality of our relationships with people (human and non-human) and the world we live in is how we cultivate quality of life and allow space for healing. If I don't allow that in my life, how can I possibly help other people to do it? So, some things (like writing!) rarely get done during the busier months.

It's been a great spring, summer and fall! Lots of experiencing, learning, harvesting medicines and doing what a herbalist does. My travelling schedule for the year ends early to mid November and now I'm spending a lot of time harvesting the last of the root herbs that I need before the ground freezes for the winter. Judging by the way things are flowing, that will probably be in a week or two in this area.

Today I harvested valerian root (Valeriana officinalis), marshmallow root (Althaea officinalis) and dandelion root (Taraxacum officinale). Tomorrow I'm going to harvest wild sarsaparilla rhizome (Aralia nudicaulis), wild ginger rhizome (Asarum canadense) and a bit more valerian root.

I am going to harvest some of the rhizomes and roots of goldenrod this year so that I can deepen my relationship with this amazing herb.

The last couple of years I've been feeling called to start working with the rhizomes and roots of Canada goldenrod (Solidago canadensis). Up to this point I've only used the aerial parts of this herb. I'm also going to harvest a bit of Solidago so that I can begin to learn this new medicine. After that I'll be done harvesting for this year – and just in time!

Since I make my tinctures from fresh herbs I need to harvest enough of each of these roots or rhizomes to get through at least 15 months: 12 months until I'm able to harvest them again next year and 3 additional months until next years tinctures will be ready because I allow them to macerate for at least 3 months before I press them [see: Making Medicine, Part 3 of 5]. Therefore I need to know how many bottles of each of these tinctures I still have on hand and how much I typically use in a year in order to determine the quantity that I need to harvest. I'll usually add an extra litre (or half litre for herbs I don't use as much) to be safe. For herbs that I used 3 litres or less per year I will sometimes harvest enough for 2 years so that I don't have to harvest every herb every year.

Although the travelling that I do is related to my work and involves hanging out with great people in great places doing great things, I am happy to be at home for the next 5+ months. I'll be able to work on some of the other things that I can't seem to manage the rest of the year like doing a few blog posts (including hopefully being able to finishing the series on vaccinations!) and continuing the process of converting some of our classroom courses to an online format. The latter tends to take up most of my time through the winter months.

The Milk Myth

When I was growing up, milk and other dairy products were considered to be among the healthiest of foods. Kids, in particular, were encouraged to drink milk liberally. It was even considered to be healthier for babies than their mother's milk and breastfeeding was generally discouraged. This was largely in response to the propaganda machine of the dairy industry which targeted parents, doctors, and heavily lobbied governments to make sure that milk was on the top of the list of healthy food choices in their various official food guides. Our society was a lot more patriarchal in those days and almost no one would ever question someone in authority like a doctor. So, if your doctor told you not to nurse your baby and put her/him on a dairy-based infant formula instead, and all through their childhood and adolescence to make sure they drank lots of the white stuff, that was what you did. It didn't matter that doctors received extremely little, if any, schooling in nutrition (not that it would have mattered much as there was very little good science behind nutrition until the last 10-20 years). They were the experts!

When it comes down to it, most doctors, even if they are among the few who are more open-minded and less stuck in a narrow reductionistic paradigm, really don't have a lot of time to keep on top of the latest research. As a result, they get most of their info from product literature provided by pharmaceutical companies and other commercial interests. Of course they have the Canadian and American Food Guides to fall back on when it comes to nutrition. But these are hugely influenced by lobbying efforts on behalf of major commercial sectors such as the dairy and meat industries.

Now, to be fair, the natural health product industry plays the same game, although they don't have the size, money and influence to do it as well as the larger, better established industries. If you go looking for information from people who work in health food stores or from many natural health practitioners (especially if they sell products), no matter how good their intentions you'll find that they are getting most of their information from biased product literature provided by the natural health product industry.


Anyway, getting back to milk, until recently most of the research out there was largely funded by the dairy industry. However, more recently there have been some decent independent studies that have been coming to very different conclusions than what the dairy industry would like us to believe. As a result, some pretty high profile researchers have begun to poke holes into some of the milk myths. For instance, see:

Some of the myths that are questioned here are: skim milk is healthier than whole milk; milk is the best source of calcium; most of the supposed health benefits of milk are unproven. They also point out that milk consumption is associated with a number of potential negative health consequences and recommend that whole milk be consumed rather than skim milk and it should be considered an optional part of our diet (no minimum daily requirement as the various official food guides recommend) and consumed in small quantities, if at all.

I would add to that to only consume certified organic dairy products. It's interesting that many people are more inclined to purchase organic fruits and veggies but aren't as concerned about dairy and meat products. The rationale is that chemicals are sprayed directly on to plants, but this is not the case with animals. I'm sure cost is one of the factors behind these attitudes. Dairy and meat tend to be among the more costly food products and when you add the organic premium they can get pretty expensive. My answer to that is to buy organic but eat less. Most North Americans eat far too much meat and dairy anyway. Aside from the fact that commercially raised animals are unhealthy from being stressed out, fed diets that are unnatural for their species, being raised in inhumane conditions, and pumped full of drugs and hormones, toxins such as agricultural chemicals become more concentrated as you move up the food chain. Although it varies depending on the chemical and the animal, on average it is about ten times at each level. That means that, since commercially raised livestock are fed commercially grown feed, the levels of agricultural chemicals in the tissues of these animals is approximately ten times the level of the plants that they are fed. Also, many animals (even herbivores) are given feed that contains animal products which will raise the levels of these chemicals in their tissues to even more than ten times. As a result, animal products are the most important foods to eat certified organic!

Getting back to milk, the dairy is the best source of calcium myth is being questioned as well. For instance, apparently bone fractures are more common in countries that have the highest dairy consumption! The authors point out that significant levels of calcium can also be obtained from leafy greens, nuts and seeds. Many herbs are a good source of calcium as well as other minerals that are necessary for the proper assimilation and utilization of calcium. These include the leaves of dandelion (Taraxacum officinale), chicory (Cichorium intybus) and nettle (Urtica dioica). Although I usually prefer to use herbs in the form of fresh plant tinctures for medicinal purposes, when they are being used for their nutritive properties it is best to take them as a tea because the amount of actual herb per unit dose is much higher to make a cup of tea than what is necessary for a dose of tincture. Most nutrients need to be consumed in much larger quantities than other more pharmacological constituents of herbs. Of course, you'll get even more minerals and other nutrients if you eat them! Many green leafy herbs are both edible and very nutritious.

Although calcium is a very important nutrient, the whole issue of how much we need is now being questioned as well. Some recent research has demonstrated that too much calcium is associated with negative health consequences, especially cardiovascular disease. For instance, check these out:

I included both of them because although one of the studies only found this association in men, but not women, the other one focused exclusively on women. It is interesting to note that there seems to be a stronger correlation when people take calcium supplements. It would have been interesting to see what they would have found had they taken into account the different forms of calcium that were supplemented.

Our obsession with calcium is one of the factors behind the recommendation to consume more dairy products. However, we seem to be getting carried away with this. Calcium supplements are one of the most common supplements recommended by doctors.

When I see new clients, I am often shocked at how much calcium they have been told to supplement by doctors and even other natural health practitioners. I often see people taking 50-100% the recommended daily amount. This is absurd! It is true that our body does not absorb 100% of the calcium we consume, however, the efficiency of calcium absorption increases the more we need it. It is also true that calcium levels are only high in a small percentage of foods, nevertheless there is calcium in everything that we eat (except in some heavily processed junk foods and beverages). In addition, doctors in particular often recommend the worst calcium supplements. Firstly, they recommend forms that are poorly absorbed such as calcium carbonate, which is the most common form found in pharmaceutical brands. Secondly, they often recommend supplements that only contain calcium and possibly some vitamin D. The latter is necessary for proper calcium absorption. Most calcium supplements contain 200-400 IU of vitamin D. Recent research has demonstrated that many people are deficient in vitamin D, so these amounts are not enough for most people. In addition, our body has to maintain a very delicate balance between many minerals. If some minerals are taken in excess it disturbs this balance, both by the increased availability of the supplemented minerals, and because excessive intake of some minerals will actually deplete our body of others. As a result, calcium should not be taken on its own. Ideally, at the very least it should be taken with vitamin D, magnesium, zinc and copper, but preferably with manganese, silicon and possibly a few other trace minerals as well. Usually the best way to take calcium is as part of a good multi mineral complex.

I don't know about you, but I don't absorb rocks very well. However, I do enjoy hanging out with them!

In my practice, I rarely recommend calcium. If someone is a bit low in this mineral, it can usually be addressed through diet - even without dairy products. In some situations and for therapeutic purposes I may recommend it, but rarely more than 200-300 mg per day, always in a well absorbed form such as calcium citrate or ascorbate, and always in combination with a decent amount of vitamin D (at least 1,000 IU) and other minerals to balance things out.

So, lets get back to milk and other dairy products. Dairy is one of the most common food allergies or sensitivities in our society. This is related to a lot of factors that are common in our society: poor diet and lifestyle practices; lack of exercise; general toxicity; stress and other emotional and psychological factors. All of these predispose us to many chronic health conditions including allergies and food sensitivities. Add to this that most of the dairy products we consume come from sick animals; are laced with drugs, hormones, agricultural chemicals and other toxins; and that milk by nature contains proteins that are irritating to our digestive tract and, in general, is over-consumed (we are more likely to develop sensitivities to foods that we consume in excess), and it's not surprising that so many people don't tolerate it well or at all. In my practice I often find dairy allergies or sensitivities associated with obesity, diabetes, and chronic inflammatory conditions of the digestive tract, skin and respiratory system. As a result, I usually have people with these kinds of conditions reduce or even eliminate dairy from their diet, depending on the individual case.

One interesting side note, in ayurvedic and siddha medicine, two ancient healing traditions from India, they extol the benefits of milk, considering it to be one of the most perfect foods. They sometimes even recommend that herbs be boiled in milk! I once had a conversation with an ayurvedic practitioner about this. I explained that I so often see milk consumption associated with chronic health conditions. It was his belief that this is because the milk we consume in the West is from sick animals, full of chemicals, pasteurized and refrigerated. He believed that the processes of pasteurization and refrigeration denature (alter the structure of) the proteins in milk making it more harmful than beneficial. I don't know if this is true, but it's something worth considering. In India, until recently, very few people had refrigeration. They usually obtained their milk fresh each day from free ranging cattle, boiled it and either used it right away or cultured it to make curd. When I was in India in the early 80's, I still had a very severe allergy to dairy products (which I eventually overcame). Although I could not tolerate dairy products in any quantity when I was at home in Canada, I could tolerate them in small amounts over there. Apparently, there is (or was) something very different about their dairy products.

The bottom line here is that milk and other dairy products are not as beneficial as they are promoted to be; are particularly problematic for a growing segment of our population who have various kinds of sensitivities to them; and can have some serious negative health consequences when over-consumed. For those who can tolerate them, it is best to consume only certified organic dairy products, and only in moderation.

Thank You Weather Beings!

I am sitting here at my computer listening to the rain. The sound of thunder from a storm that just passed is fading off towards the east. I can also hear a new storm approaching from the west. In my heart I feel incredibly grateful. This past winter was the warmest and driest winter that I can remember. The temperature was above freezing during the day most of the winter and we had virtually no snow or precipitation of any kind. March and the first half of April were very warm for this region. Consequently, when I was walking in the woods in late April, the level of dryness was more like early to mid July.

Fortunately, it did cool down for a few weeks and we got some rain from mid April to mid May. But it wasn't enough. The level of moisture in the soil and in wetlands and rivers was already at a deficit because of the lack of snow melt. I was up at Lake Superior in May. I have never seen the water level so low. Not even in mid summer! In June the water level of Georgian Bay (Lake Huron) was also as low as I can remember except once a number of years ago in July after we had experienced a few dry years in a row.

The region where I live has been experiencing a fairly bad drought. Thankfully, it hasn't been nearly as bad as what they are experiencing in the central States and my heart goes out to all of the plant, animal and human people who live there. It seems to be part of human nature that we tend to take the many blessings of life for granted. We love to complain about the rain when it happens at an inconvenient time. But when we really need it, at least some people take notice. Farmers notice. On the other hand, some city folk are too self-absorbed in their artificial world. Maybe they get a bit annoyed at having to water their lawn more often.

Last week we finally got some relief. For about a day and a half we had pretty steady soaking rain. Later in the week we had a decent amount for another evening. Needless to say I was very happy, and so were all of the plants and animals that live around here. Today, since early afternoon, we have been getting a fair amount of rain again. The meteorologists are predicting it will continue well into the evening. I haven't had much faith in them for many years. Our weather patterns have become too changeable and unpredictable in the last few decades. I don't trust their weather predictions more than a few hours in advance. Since mid June they have predicted about 20 days of rain (40-60% chance) for this immediate area. We got a little bit of rain on one of them. That is, until last week and today. All I can say is I am very thankful to hear the voices of the Weather Beings echoing through the sky right now. Any amount of rain that they leave us will be greatly appreciated.

As an herbalist, I have always been very in tune with the cycles of nature and how they affect the plants and ecosystem where I live. The weather we have been having has a profound affect on the world around us. There are many things that are different this year. There are a lot more butterflies, but less flies, bees and wasps. It was so warm in March and early April that many trees bloomed much earlier than normal. Insects also emerged early. Then in April there were a couple of weeks where the temperature was below normal and there were some bad frosts that killed a lot of the flowers and pollinating insects. The trees and shrubs that managed to get through it and produce a decent amount of fruit then had to deal with the drought. We got some rain in April and May, but there was almost none in June and July and it was consistently hotter than normal. Many plants that produce fleshy fruits allowed them to dry up before they matured. They couldn't spare the water necessary for their fruits to develop. Where I live, the hawthorns (Crataegus spp.) actually produced a lot of fruit initially, but they dried up in early July and the few that continued to mature were affected by some kind of fungus.

During hot dry years, many plants accelerate their life cycle. They try to flower and produce seed before it gets so dry that they die or are forced to die back to preserve moisture. This year most of the plants in the areas that I have visited have been two to three weeks ahead of schedule, sometimes more. For example, I harvest wild peppermint (Mentha x piperita) a week or two after it goes into flower. This year it was ready for harvesting last week. In the areas where I harvest peppermint it is usually ready around the second or third week of August.

Drought doesn't just speed up the life cycle of plants and reduce production of fleshy fruits. When the soil is too dry, plants lose more moisture through respiration than they can replenish. At that point it is better to allow their aerial parts to die in hope of being able to preserve enough moisture in their roots and rhizomes until the soil is moist again. Unfortunately, if they die back too soon they may not have produced enough of a store of carbohydrates to keep them alive until the following spring. Plants with shallow roots are particularly susceptible. You can see that by looking at people's lawns. Grasses tend to have very shallow roots. Consequently, during a drought they tend to die back first. People accelerate this process by cutting their lawn. It isn't good to cut the lawn during a drought. The soil becomes more exposed to the drying effect of the sun. Taller grasses and other plants also tend to trap moisture and create a cooler micro climate close to the soil. If we do cut the grass, it shouldn't be cut shorter than 10-12 cm (4-5 inches). It is best not to cut it much shorter than that even when it isn't so dry. Nevertheless, most people cut their lawn way too short. During drought conditions, the grass will turn brown pretty quick, but plants with deeper roots like white clover (Trifolium repens), birdsfoot trefoil (Lotus corniculatus) and dandelion (Taraxacum officinale) will stay green much longer. Driving around in the rural areas near where I live last week it was obvious how much of any given lawn was made up of these plants because the grass was brown but they were still green.

Plants in woodland areas are particularly sensitive to drought conditions. Woodland plants generally need rich, moist soils. The shade of the tree canopy tends to keep the soil more moist than in other ecosystems (except wetlands), but prolonged heat and lack of rain will eventually result in dry woodland soils. Once more, plants with shallow roots and rhizomes will tend to die back early. In the woods where I live, many of the shallow rooted species have begun to or have already died back, such as mayapple (Podophyllum peltatum), blue cohosh (Caulophyllum thalictroides) and Virginia waterleaf (Hydrophyllum virginianum). Bloodroot (Sanguinaria canadensis) also has a shallow rhizome, but because it is fleshy and tuberous, it holds more moisture and can resist the dry conditions for a bit longer. However, even the bloodroot is now showing signs of stress. One interesting anomaly is wild ginger (Asarum canadense). It has very shallow rhizomes that mostly sit on the surface of the soil, but it is even more drought resistant than bloodrood. This is because its rhizomes are a bit on the fleshy side; its leaves are very hairy, which helps prevent evaporation during the day and trap moisture at night; and its rhizomes, which mostly rest on the surface, can also take advantage of the dew at night.

When a plant species shows signs of drought stress we don't want to harvest it. We only harvest from plant populations that are strong and healthy. Many plants can live in a range of conditions, particularly with regard to the amount of sunlight that they receive. For instance, dandelion is particularly versatile. It can live in open woodlands where it gets diffuse light all the way to open fields where it receives direct sunlight 80-100% of the day. What is more common are plants that can live in a slightly narrower range of conditions such as transition areas where they receive as little as 20-30% direct sunlight, as well as in open fields. For these plants, during drier years it is better to harvest them in areas where they receive more shade. During cool, wet summers it is best to harvest them in full sun. It is usually easy to tell which ones are the healthiest during any given set of conditions because they will look it. Similarly, this year it will be better to harvest blue cohosh in low lying moister woodland areas where it isn't showing signs of drought stress and dies back no earlier than mid September.

The rain has now stopped and the sun is streaming through. I hope we get some more rain tonight as predicted. In the mean time, I am very grateful for what we have received.

Probiotics and Fibre

Really, this is a no brainer, but it's great that it's finally been "verified". Of course fibre boosts beneficial gut flora! In a healthy gut, that's all that there is for them to eat. All of the useful carbohydrates, proteins and lipids, etc., should have been digested and absorbed. Unfortunately, due to general trends in diet and lifestyle these days, almost everyone's digestion is compromised to some degree. That leads to alterations in gut flora, which is one of the primary causes of the development of inflammatory diseases of the digestive tract. It's sad (but typical) that for decades the medical establishment claimed that probiotics were useless. Another kind of snake oil promoted by natural health practitioners. However, in the last decade they have become the rage, at least among researchers. Their use hasn't percolated down to the doctors and nurses in the front lines to any great degree yet. There's been tons of research on their health promoting benefits, from improving digestion to boosting the immune system. Of course no one admitted they were wrong, but at least this the information is finally getting out there to the general public.

The moral of the story is that for this and many other reasons it's important to eat lots of fibre. In situations where taking probiotics is recommended, take them with some source of (preferably soluble) fibre. I personally recommend taking them with whole flax seeds and/or psyllium husks - certified organic of course!

Many people who take probiotic supplements may have heard of fructooligosaccharides (FOS). These are relatively small polysaccharides composed of fructose units. They are particularly common in the latex and roots of herbs from the Aster family like elecampane (Inula helenium), dandelion (Taraxacum officinale), chicory (Cichorium intybus) and burdock (Arctium spp.). They are undigestible by humans and therefore make up part of the fibre content of our diet. They are one of the kinds of fibre that help promote healthy intestinal flora. Many probiotic supplements include FOS and often charge more money for it. Be forewarned that this is just a gimmick. The amount of FOS in these products is irrelevant. That doesn't mean that some of them aren't good quality products. But their inclusion of FOS is for optics only. It adds virtually no value to the product. If you want FOS, eat Jerusalem artichokes (Helianthus tuberosus) or very young dandelion, burdock or chicory roots (the roots of older plants may make great medicine, but not great eating). When it comes to probiotics, take them with soluble fibre and you'll get much better results.
